Habachi at home

We love Japanese hibachi style food. But the  steak houses tend to be very expensive and sometimes you don't want to eat with strangers.  There are only so many times you can gasp in fake awe at an flaming onion volcano! So this is how we do it at home.
Here is what you need for four servings
6 small zucchini
2 med onions
small ginger root
garlic
2 boxes of take out steamed rice
steak or chicken or both
lettuce
soy sauce
teriyaki sauce
rice wine vinegar or substitute white vinegar
2 eggs
The most important part of this is to get all of the ingredients gathered and ready

NOTE..I used take out  steamed rice ..because it is cheap and easy
I like to fry ours at home because I don't like all of the oil from the restaurants

To make fried rice at home your rice must be cold. If you use hot rice it will be a glumpy mess. So put it in the fridge over night or stick it in the freezer while preparing your ingredients.
Cut you meat in bite size pieces, pour 1/4 cup each teriyaki & soy sauce over the meat. Set aside.


Ginger Dressing


  • 1/2 cup minced onion




  • 1/2 cup peanut oil




  • 1/3 cup rice wine vinegar




  • 2 tablespoons water




  • 2 tablespoons minced fresh ginger root




  • 2 tablespoons minced celery




  • 2 tablespoons ketchup




  • 4 teaspoons soy sauce




  • 2 teaspoons white sugar




  • 2 teaspoons lemon juice




  • 1/2 teaspoon minced garlic



  • I omitted the oil. It does nothing for the taste. It is really just an extender. Just throw it all in together in the processor. Process well.




    Heat a large frying pan and add  oil .
    Drain your meat well. If you don't your meat will not get a good sear and you will end up "boiling" the meat. Fry till done as you like it.

    2 tablespoons oil
    2 eggs
    3 tablespoons soy sauce
    2 tablespoons teriyaki sauce
    salt and pepper


    Have another pan ready
    Add two tablespoons oil and break up two eggs, fry in pan then add cool rice, soy and teriyaki sauce. Salt and pepper. ( Asian restaurants use white pepper, but black pepper is fine. )
    Add carrots, peas, mushrooms or other veggies if desired
    Turn the rice often till heated thru and the rice is well done.
    Pour in serving dish.

    Four zucchini
    1 onion
    3 tablespoons soy sauce
    1 tablespoon teriyaki sauce

    Throw in together and cook till just done. They will cook fast. Don't overcook or they will be mushy.
    Make a flaming onion volcano if wanted..have an extinguisher handy!
